Finesse Pastries: A Little Taste of France Right in the Heart of New England

By Elisha Neubauer

In 2012, after a long range of studies in the culinary arts, Chelsey Erickson officially launched her dream...she kicked open the doors to her very own shop, Finesse Pastries.

Erickson always knew she wanted to be in the culinary arts industry. Shortly after graduating high school, Erickson began studying the culinary arts at the Cambridge School of Culinary Arts. She was lucky enough to secure her studies under the Master French Pastry Chef Delphin Gomes, starting her career on the right path. After graduating from the Cambridge program, Erickson travelled to France to work with Chef Gomes.

Since its opening four years ago, Finesse Pastries has gone on to win several awards. The shop has continued to win the Best Desserts in New Hampshire Award and the Best Bakery in Manchester each and every year, in addition to several other awards for their delicious pastries and edibles.

The year of 2017 brings several major changes for Finesse Pastries. Perhaps the largest change is the relocation that is planned. The shop will be moving to a new location in Boston, right in the Boston Public Market on Hanover Street.

Another impressive change is that, beginning in January of 2017, Finesse Pastries will be selecting a charity each and every month. A custom macaroon will be created specific to that month's chosen charity and $0.50 of each macaroon will be donated to that charity. "This will increase awareness and help local charities," says Erickson. "Who knew doing good could taste so good!"

Regardless of the upcoming changes, Finesse Pastries is still offering, and will be continuing to offer only the freshest, gourmet pastries. "We use only the highest quality ingredients", Erickson states. "Everything that we can use local, we do. The only things that are not are the French ingredients we get imported."
