Everyday Freshness at Buckley's Bakery

Emily Stapleton and the staff at Buckley's Bakery are always striving to be better.

All kinds of new concoctions are constantly being developed, from new drink creations to pastry items and sandwiches. There's something new every few weeks at the bakery in Merrimack, N.H., which ensures you'll never get tired of its all-natural menu.

"We pride ourselves in making everything from scratch, every single day," said Stapleton, who is the General Manager of Buckley's.

The bakery, open daily from 6 a.m. to 6 p.m., consists of breakfast, lunch and dinner items. Preparation for the day begins in the wee hours in the morning, when the prep cooks arrive around 4 a.m. to make sure everything is ready to go for the morning commute.

Breakfast pastries such as croissants, muffins and cinnamon rolls are on the menu, as are breakfast sandwiches (constructed using homemade bread) and even a breakfast pizza. Lunch items, which are available first thing in the morning for commuters, include salads, cold sandwiches, paninis, chicken salad wraps and sushi bowls.

Around 11 a.m., hot items such as soup and the entrée of the day are made available. But all day long, cookies, cakes, breads and other pastries are on display, courtesy of the hard-working chefs. The staff prides itself on a menu that is anything but boring.

"We could cut corners, buy frozen and make things easy or forgettable, but owner Michael Buckley doesn't settle for that," Stapleton said. "We have all of our restaurant pastry chefs working together under one roof so we can offer the best desserts around. We have an incredible team of Front of House employees that create a memorable experience."

Beverages available include locally-brewed coffee, fresh pressed fruit and veggie juices, and various types of smoothies. Gluten free options are available throughout the menu, too.

Stapleton added that the employees will grow to learn not only your name, but your order.

"If we see you pull up in our parking lot, we'll start to get it ready for you," she said. "There's a good sense of community here."

Stapleton loves her job in part due to the hard working team on board at Buckley's Bakery, but she also takes pride in seeing new faces become regular customers. There's a reason people keep coming back, after all.

"I love that we have customers that come in every single day for their coffee; that reinforces that you are doing something right," she said. "I love that we serve good, fresh food and it makes me happy to be able to honestly tell our guests 'yes, that was made this morning!'"
